Benes yfryed

ORIGINAL: Benes yfryed. Take benes and seeş hem almost til şey bersten. Take and wryng out şe water clene. Do şerto oynouns ysode and ymynced, and garlec şerwith; frye hem in oile oşer in grece, & do şerto powdour douce, & serue it forth..
NOTES: I used fava beans to test this. They tasted okay, but looked disgusting, and most of the Cook's Guild members didn't even try them. I'll try it again with white kidney beans.
For a large quantity it would be easier to mash the beans before frying (not that they necessarily should be mashed, but when I read the recipe, it sounds like refried beans). The onions were supposed to be boiled first, but I don't think it really made a difference.
  1. Heat oil, stir in onion and cook for a few minutes.
  2. Add garlic and cook for another minute.
  3. Add beans, and stir and mash until everything in one solid mass.
  4. Stir in spices and sugar.
