Champignons en pasté

ORIGINAL:
Mushrooms of one night are the best, if they are small, red inside, and closed at the top; and they should be peeled and then washed in hot water and parboiled, and if you wish to put them in a pasty add oil, cheese, and spice powder.
INGREDIENTS:
- 12 oz. Mushrooms
- 8 oz Cheese (cheddar/Swiss mix is good)
- 2 T (1/8 cup) Olive oil
- 1/4 tsp Pepper
- 1/4 tsp Ginger
- 1/4 tsp Coriander
- 1 Pastry shell

DIRECTIONS:
- Clean and slice mushrooms.
- Grate cheese.
- Mix all ingredients.
- Bake for 30-40 min. Cover with foil if necessary to keep cheese from browning too much
